I am a kitchen gadget geek. Nine times out of ten, I get the gadget, use it once, and then into the kitchen gadget graveyard it goes! But there are a handful of things I bought because they looked cool and use ALL OF THE TIME. A mandoline, for one. A good garlic press. Citrus juicers of various sizes, and an egg poaching pan. But my number one best kitchen small appliance is my Instant Pot. I’ve always been fascinated with pressure cooking. But having a glass cook top and a healthy fear of exploding pots kept me away. I swear by Nom Nom Paleo’s Instant Pot bone broth recipe. It’s beyond easy, and the resulting broth is so incredibly versatile. I make at least once batch a week for drinking and to use in soups and anything else that calls for broth. You can use any bones you want, but I’ve found that chicken feet and pork bones have just the right balance of flavor, fat, and tons of gelatin.

This crazy simple 3-ingredient side dish by Unsophisticook is perfect to serve along side Asian and Indian dishes. Or just eat it by itself, it’s that good. And seriously, just 3 ingredients! My kids LOVE hummus, I can’t restock it as fast as they go through it. I’ve made hummus before, but it didn’t come out quite right. I tried this recipe by Everyday Maven, and success! The best part is that this recipe requires NO SOAKING. Dry beans, right in the pot. Customize the hummus according to what you and your family like. We add lots of garlic and lemon juice.

Confession: I hate hard boiled eggs. Haaaaaaaaate. I’m not a big egg fan to begin with, but the texture of hard boiled eggs in an affront to my sense. But, my kids love them. And I’m not completely against deviled eggs (yes, I know they’re hard boiled, but they have toppings and good stuff, so I overlook the rubbery white part). “Hard boiling” eggs in your Instant Pot will change your life.
