Fajitas are, hands down, our favorite thing to order when we eat out at a Mexican restaurant. There’s just something so exciting about your food being walked out in a sizzling skillet, and being able to eat it however you want. But making fajitas at home can be tricky, what with the smoke alarms and whatnot. So skip the fire hazard and make these clean one pan chicken fajitas from Eating Well. Sliced chicken breast, red and yellow peppers, and onions, tossed in just a bit of olive oil and seasoned with cumin, chili powder, garlic powder, and salt, roasted to perfection in the oven. Serve with tortillas, and use the leftovers in a fajita salad the next day.
